Olive oil is meant to be enjoyed by itself, and especially baked into other yummy dishes. Listed below are a few favorite recipes to enjoy. Greek Roasted Red Pepper and Feta Dip
¼ cup extra-virgin olive oil 2 cloves garlic, chopped ½ tsp red pepper flakes 2 cups crumbled feta cheese (about 1 pound) 3 or 4 bottled pickled red bell peppers, drained & cut into 1" pieces 1 red & 1 yellow bell pepper, sliced for dipping
In a small skillet over medium heat, warm the olive oil. Add the garlic and cook until it starts to turn translucent, 1 to 2 minutes. Sprinkle in the pepper flakes and cook for 30 seconds longer. Remove from heat.
Place garlic mixture in a food processor and add the feta and drained peppers. Pulse until smooth, scraping sides of the bowl frequently. Transfer to a bowl, cover and store in the refrigerator 1 hour before serving. The texture will thicken slightly and the flavors will deepen.
Fennel – Olive Oil Quick Bread
3 cups flour 1 tbsp crushed fennel seed 4 tsp baking powder 1 tbsp dried dill 1 tsp salt 12 oz (1 can) light beer 4 tbsp light brown sugar 3 tbsp extra-virgin olive oil
Preheat oven to 375 degrees. Oil 12-cup muffin tin with olive oil.
Combine flour, baking powder, salt brown sugar, fennel seeds, and dill. Add the beer and stir until well mixed. Pour into muffin tin, smooth out tops of muffins, pour equal amounts of olive oil over each muffin. Bake 20-25 minutes. Serve warm with extra-virgin olive oil for dipping.
